Want nachos the quick and easy way? Try this Easy and Delicious Nacho Dip! It’s the work of moments and looks gorgeous on a buffet. I do feel obliged to warn you though, it’s absolutely addictive! You can serve it alongside tortilla chips for traditional nachos or for a healthier option, serve with carrot and celery sticks or other sliced vegetables.
This Easy and Delicious Nacho Dip recipe comes via my lovely cousin Dawn who brought it to a family get together a couple of summers ago.
Here I am with my cousins that day. My cousin in law Maureen is on my left. Dawn in on my right and her sister Esther is on the far right. We live a long way from each other but whenever we get together it’s like we’ve never been apart. We also have lovely long phone conversations to help us stay in touch.
But back to the Easy and Delicious Nacho Dip. Dawn explained that you can tailor the recipe to your family by choosing ingredients to suit your tastes and dietary requirements.
Low fat cream cheese and yogurt work just as well as the full fat varieties in this recipe. Homemade or store bought salsa works just fine. Choose mild or spicy depending on your tastes. Using two cheddar cheeses as shown in the photograph makes the dip look really colourful but you can use whatever hard cheeses you like best. If you want to make things really spicy, use Pepper Jack cheese.
On the day of our family party, Dawn brought all the ingredients to the party in a cooler and prepared the dip at the last minute. I couldn’t believe how quickly it came together or how fast it disappeared! Since then I’ve made Dawn’s Easy and Delicious Nacho Dip several times and I’m always asked for the recipe.
The best thing about this Easy and Delicious Nacho Dip is that you probably have most of the ingredients already on hand. It’s perfect for last minute entertaining or a game day treat.
- 2 small packages or large package of cream cheese
- ¼ cup plain yogurt
- 2 to 2½ cups of your favourite tomato salsa
- 1½ to 2 cups shredded cheese
- Using an electric mixer, cream together the cream cheese and the yogurt.
- Spread in the bottom of a pie plate.
- Spread the salsa over top.
- Top with the shredded cheese.
- Serve with tortilla chips or sliced veggies.
